Developing a Policy Course in Hospitality ManagementSchool of Hotel and Food Administration University of Guelph Ontario, Canada This paper deals with policy as a curriculum component in a hospitality curriculum. The paper specifically outlines a process that can be used in preparing a hospitality policy course that requires students to deal effectively with the policy issues surrounding decisions currently being considered within our industry. The article is divided into two parts. Part 1 is a review of the importance of policy as a curriculum component and discussion of the teaching methodology most commonly used in course delivery. Part 2 presents some guidelines and developmental processes that can be helpful in developing a hospitality policy course.
