Foodservice Management Training for Dislocated Workers: Evaluation With a Nontraditional Sample

An eight week food service management training program was prepared and presented to 24 unemployed steel workers through a retraining project sponsored by the AFL-CIO. Program impact was evaluated using participant reactions to their training experience and their post- training behavior. Selection interview impressions, peer nominations, and expressed needs for further training were related to their evaluation and later entry into foodservices. Research im plications for foodservice training programs for nontraditional students or "soft core" unemployed are discussed.
